Our Story

PIXCA comes from the ancient Mayan language and refers to the word "harvest." Just like a harvest, our menu is always seasonal. Our chefs craft new menus for each season of the year, complemented by weekly specials that highlight the freshest seasonal produce. From the start, our dream was to create a restaurant where we could cook with what’s available—minimizing waste while celebrating the best ingredients each season has to offer.

Over time, we’ve built strong relationships with our farmers, and now, we’re proud to bring those connections to Pixca. With the freshest ingredients at our fingertips, we create beautiful dishes—always served with a smile. After all, when our customers are happy, so are we.

Meet Chef Fernando Angelina

A brief glimpse into the inspiration behind Pixca:

 

Chef Fernando's passion for cooking goes all the way back to his childhood days in Oaxaca, Mexico. He takes direct inspiration from helping his mom on the family farm and this wood-grilling history has shaped his technique today. The fond memories are near and dear to his heart to the extent that he draws on his upbringing to inspire his seasonal creations with a domain around delicious farm-to-table cuisine with a vegetable conscious palate.

 

Rooted in community:

 At the young age of 27, Fernando became the Executive Chef at Glencoe's local Guildhall.  His journey in the restaurant industry has shaped his disciplined love for the kitchen and all manners of business acumen that a chef must possess.  After many years as an executive chef, he conceived and launched Pixca. 

Differentiating factor: 

His love for changing people's perception of what vegetables could be is the genesis for opening his own restaurant. His passion for pickling, wood-grilling, natural fermentation and a vast use of spices comes alive throughout his menu. His ongoing effort to forge relationships with local farms also influences his culinary creations. He is committed to always experimenting , respecting traditions while avoiding reinventions and making his mark.
