Meet Chef-Owner Fernando Angelina
A brief glimpse into the inspiration behind Pixca:
Chef Fernando's passion for cooking goes all the way back to his childhood days in Oaxaca, Mexico. He takes direct inspiration from helping his mom on the family farm and this wood-grilling history has shaped his technique today. The fond memories are near and dear to his heart to the extent that he draws on his upbringing to inspire his seasonal creations with a domain around delicious farm-to-table cuisine with a vegetable conscious palate.
Rooted in community:
At the young age of 27, Fernando became the Executive Chef at Glencoe's local Guildhall. His journey in the restaurant industry has shaped his disciplined love for the kitchen and all manners of business acumen that a chef-owner must possess. After many years as an executive chef, he conceived and launched his restaurant, Pixca.
Differentiating factor:
His love for changing people's perception of what vegetables could be is the genesis for opening his own restaurant. His passion for pickling, wood-grilling, natural fermentation and a vast use of spices comes alive throughout his menu. His ongoing effort to forge relationships with local farms also influences his culinary creations. He is committed to always experimenting , respecting traditions while avoiding reinventions and making his mark.
